Homemade Peanut Butter Cookies

Nick absolutely loves peanut butter, so I thought I would surprise him today with homemade peanut butter cookies:o) yummm-o!

The recipe:

1 cup butter, softened
1 cup crunchy peanut butter (you can use creamy if you like but I like the crunchy peanut bits in a soft cookie)
1 cup sugar
1 cup firmly packed light brown sugar
2 large eggs
2 1/2 cups all-purpose flour
2 teaspoons baking soda
1/4 teaspoon salt
1 teaspoon vanilla extract

How to make them:
Beat butter and peanut butter at medium speed with electric mixer until creamy



Gradually add sugars, beating well. Add eggs, again beating well.



(it will be a creamy but thick batter)

Combine flour, baking soda and salt in a medium bowl; add to peanut butter mixture, beat well.



Stir in vanilla.
Cover and chill for 3 hours.



Shape into 1 1/4 balls, make sure you place them 3 inches apart on ungreased baking sheets (they WILL swell!).



Dip a fork in granulated sugar, flatten cookies in a crisscross design. Just press down enough to make the design, you don't want to totally flatten the cookies!






Bake at 375 for 7-8 minutes.



Put on wire rack or wax paper to cool.
Ta-daaaaaa!!!!!!!


Makes 6 dozen (I usually cut the recipe in half to make 3 dz)
